Let's talk FAT!

Hiking in the mountains yesterday my back pocket buzzed in a text..."Keto really works" and later in the day, "We're about to start keto" and at another point in the day,  "How did you really lose all this weigh? I hear you ate fat?"  One of the functions of the blog is not only sharing the journey but pointing the way.  I've spent 17 months finding my food, keeping my food and understanding the foods I eat.  Fat has not made me fat because I gave up the bread with it.  I traded something off.  I gave us "this" to get "that".  I like "that" and am keeping it...

Fat and Sugar are  topics that creep into most of my conversations at some point.  As most of you know I've been very reticent about talking about what I eat.  But word has gotten out. I eat a lot of fat!  I embrace fat in the context of a low carb diet.  In that journey I've come away with a ton of knowledge, awareness and experience.  If the daily or weekly conversations I get into, or the messages I receive are any indication there is a lot of attention swirling around both Fats and Sugars.

THERE ARE THINGS YOU NEED TO KNOW...

It's bread or butter not bread and butter.  

I Quote Dr. Mark Hyman: "Sugar, not fat, makes you fat. The average American eats 152 pounds of sugar and 146 pounds of flour that converts to sugar every year."

If you're going to put butter in your coffee make sure to leave the milk out!

But what about my Low Fat diet?  It will work right?

Again let's hear from Dr. Hyman: "Low-fat diets tend to be heart-unhealthy, high-sugar diets. When people eat less fat, they tend to eat more starch or sugar instead, and this actually increases their levels of the small, dense cholesterol that causes heart attacks.

Eating butter and NOT the bread is a restrictive way to eat.  Low Carb, Keto, Paleo, Primal are all restrictive ways of eating.  Something has been left behind and other things embraced.  In that processed I found that I love eating the way I do.  My foods are whole, nutritious and satisfying.  I'm not living with a sense of denial or am hungry.  I've got energy, and peace with food.

Yesterday I hiked Blood Mtn with a friend, on a handful of nuts.  The highest fat content nuts out there!
